According to Nielsen data, the market size reached 9.583 billion yuan in 2014 and surpassed 10 billion yuan in 2015, hitting 10.981 billion yuan. Among these, ambient lactic acid bacteria beverages grew notably, becoming a major driver of the entire industry. In 2016, the number of ambient lactic acid bacteria brands exceeded 100, leading to a situation of "many heroes standing side by side, warlords vying for supremacy."

Influenced by the positive development trend of the domestic lactic acid bacteria market, a large number of second- and third-tier brands entered the ambient segment to carve out market share. According to preliminary statistics, in 2016, there were over 100 ambient lactic acid bacteria brands (those sold in supermarket channels with a certain annual sales scale). From south to north, ambient lactic acid bacteria products are still dominated by local brands, presenting a market landscape of "many heroes standing side by side, warlords vying for supremacy," and channel competition will be the key to success for ambient lactic acid bacteria enterprises.

County-level markets hold a high share; Jiangxi, Sichuan, Hubei become emerging regions

Latest research data from Kantar Worldpanel shows that sales of ambient lactic acid bacteria beverages in cities of all levels are growing year by year. As of May 2016, the market share of ambient lactic acid bacteria in key and provincial capital cities was 14.8%, while in county-level cities it was as high as 52.4%. This shows that economically developed first-tier cities are the dominant market for low-temperature lactic acid bacteria, while the broader county-level market is gradually being captured by ambient lactic acid bacteria, forming regional complementarity. According to statistics, from May 2015 to May 2016, 38.5% of consumer households in county-level cities purchased ambient lactic acid bacteria.

From a national perspective, the overall lactic acid bacteria market is developing from south to north, starting from Guangzhou and moving north to Shanghai, then expanding to Shandong and Beijing. Examples include "Jinwei," "Qiangren," and "Xile" in Guangdong; "Xiyingmen" and "Dongjun" in Shandong; and "Wushang" and "Xiaodaodan" in Jiangsu-Zhejiang. In regions such as Fujian, Shaanxi, Hunan, Hebei, Anhui, and Tianjin, there is still significant room for growth for ambient lactic acid bacteria. These areas are dominated by brands like "Junchang," "Xiaoyang," "Xiaoyangren," "Wahaha," and "Xiongchumo," which are expanding nationwide. In southwestern regions like Chongqing, Guizhou, and Yunnan, the "Junyao" brand remains dominant.

It is worth noting that the development of both the overall lactic acid bacteria market and ambient lactic acid bacteria is not entirely determined by economic level. Some inland markets are becoming key expansion areas for ambient lactic acid bacteria. Starting this year, Jiangxi, Northeast, Sichuan, and Hubei have gradually become emerging best-selling regions for ambient lactic acid bacteria. The main reason is that consumers in these areas have a mature understanding of the health benefits of lactic acid bacteria, but there are no strong local ambient lactic acid bacteria enterprises, presenting opportunities for outside companies.

Although market development is just beginning, the broad market prospects attract many enterprises. Xiong Yuqing, general manager of Jiangxi Jintudi Natural Food and Beverage Co., Ltd., said: "Taking Jiangxi as an example, compared with first- and second-tier cities, Jiangxi's economy is not developed, and sales of low-temperature lactic acid bacteria in modern channels are not ideal. However, ambient products require lower entry costs and offer higher channel profits, so our products sell well here, even better than in central provinces."

Channel distribution polarized; supermarkets account for 40%

While ambient lactic acid bacteria products are flourishing nationwide, channel distribution is showing a trend of polarization. On one hand, some ambient lactic acid bacteria enterprises focus on first-tier city hypermarket channels and cold chain systems, avoiding the "red ocean" of ambient lactic acid bacteria competition and treating low-temperature lactic acid bacteria as competitors. On the other hand, most second- and third-tier brands concentrate on wholesale and distribution channels, convenience stores, and local chain stores in county-level markets.

Latest data from Kantar Worldpanel shows: BC-class supermarkets are the main sales channel for ambient lactic acid bacteria, with a stable market share of 40% in 2015. In terms of growth, the gift and convenience store channels have seen significant increases in both value growth rate and market share. By city level, in first-tier cities, supermarkets, gifts, and convenience stores are the fastest-growing channels for ambient lactic acid bacteria, with annual growth rates of 40%, 36%, and 79%, respectively. In second- and third-tier cities, supermarkets, grocery stores, convenience stores, and gifts all show rapid growth.

Ni Yongkang, chairman and general manager of Hangzhou Wushang Biotechnology Co., Ltd., believes: "Low-temperature and ambient products have completely different operational requirements. Currently, low-temperature lactic acid bacteria are mainly sold in large KA stores and supermarkets equipped with cold chain systems, while ambient lactic acid bacteria are not restricted by region or venue. Therefore, low-temperature products can be sold in ambient channels, but not vice versa."

Guangzhou Xile Food Enterprise Co., Ltd. (hereinafter referred to as "Xile")'s "Junyoudou" is a product mainly sold through low-temperature channels in first-tier cities like Beijing. Xile's general manager Huang Desheng said: "The price war in the ambient lactic acid bacteria market in second- and third-tier cities is too fierce. Xile chose to change the mainstream bottle size and enter first-tier city supermarket systems with 360ml/bottle, while also covering national distribution and closed channels."

In addition, ambient lactic acid bacteria sales channels are diversifying, with catering and wedding banquet channels becoming new directions for enterprise expansion. Hangzhou Xiaodaodan Biotechnology Co., Ltd. (hereinafter referred to as "Xiaodaodan") is one of the enterprises actively seeking new channels. Xiaodaodan's chairman Liu Zhimin told Food Board: "Ambient lactic acid bacteria products are becoming homogeneous, and competition is increasingly fierce. Xiaodaodan has broken away from conventional thinking, not only with differentiated naming but also by actively developing new channels. The company's newly launched 'Shiquan Shimei' lactic acid bacteria series uses festive packaging and targets catering and wedding banquet markets. In addition, the company's AD calcium lactic acid bacteria, 'Fruit and Vegetable Micro Meal,' and 'Buzhidao' products are all differentiated series created for different consumption scenarios."

5 yuan is the mid-range price point; 330ml mainstream specification broken

A survey by Food Board found that the ambient lactic acid bacteria market has basically formed a mid-range price point of 5 yuan per bottle, with most products retailing between 4.5 yuan and 6 yuan per bottle depending on the channel, which is lower than low-temperature lactic acid bacteria. Industry insiders say that ambient and low-temperature lactic acid bacteria target different consumer groups, with low channel overlap, and ambient enterprises face more competition from within the ambient market itself.

With the influx of many enterprises, the "price war" among ambient lactic acid bacteria brands in second- and third-tier cities is intensifying. For example, in one market region, a large dairy company, in order to quickly enter the northern ambient lactic acid bacteria market, sold its new 330ml ambient lactic acid bacteria product at 1 yuan per bottle, making it impossible for competitors to fight back. Now, as competition in the ambient lactic acid bacteria market reaches a white-hot stage, profit margins are being squeezed, with distributor profits generally maintained between 20% and 30%.

To avoid joining the price melee, some ambient lactic acid bacteria enterprises are seeking differentiated development. Similarly, the 1000ml size is also launched for wedding banquet and catering channels outside distribution, and it is increasingly popular in catering channels due to its mild taste and high nutritional value."

Shandong Tongyuan Food Co., Ltd. (hereinafter referred to as "Tongyuan")'s "Zhiyi" series, while retaining the mainstream specification, also launched 100ml and 888ml sizes. Pang Xiangmin, vice president of Tongyuan, frankly stated: "Currently, the market for large-size ambient lactic acid bacteria for catering and wedding banquet channels is large, with great potential but relatively weak competition. At the same time, affected by the price war in mainstream specifications, 'Zhiyi' has also launched different specifications to capture a broader market."

Ambient lactic acid bacteria, with their mild taste, have an advantage in the winter catering market. Deyuquan's 'Chunchang' series has made catering channels in North China one of its key promotion channels."

Competition enters "white-hot" stage; differentiated marketing becomes "trump card"

Today's ambient lactic acid bacteria market is entering an era of more intense competition. Although the ambient lactic acid bacteria market has successfully built brand recognition, the head of the marketing department of Haocaitou Beverage Business Unit said: "The brand name 'Xiaoyang' itself is a very distinctive name that cannot be replaced by others. It is also a hot word pursued by consumers born after 1985 and 1990. Before a national leading brand emerges, strong regional brands are using all means to stand out among many enterprises.

The situation of "many heroes fighting in chaos" has created a rich market atmosphere for the development of ambient lactic acid bacteria, but it has also led to a situation of "mixed good and bad" in the market. As Meng Suhe, chairman of the Chinese Institute of Food Science and Technology, said: "The 'melamine' incident is a shame and a wake-up call for China's dairy industry. After more than 20 years of difficult cultivation, China's lactic acid bacteria industry must adhere to a healthy operating model.
