"Chao Shou" is the Sichuan name for wonton. Chengdu's "Long Chao Shou" was established in 1941 at Yuelai Chang, moved to Xinji Chang in the early 1950s, and then to the southern section of Chunxi Road in the 1960s, with a history of over 70 years. Zhong Shui Jiao, formerly known as "Shui Jiao," is a traditional local snack in Chengdu, Sichuan Province, also called "Lizhi Lane Red Oil Dumplings." Zhong Shui Jiao uses only pork filling, without other fresh vegetables, and is served with a special red oil sauce. It features thin wrappers (10 dumplings weigh only 50 grams), refined ingredients (high-quality flour and selected pork with tendons and skin removed), tender filling (achieved by controlling temperature and moisture during processing, making the filling fine and tender), and fresh taste (thanks to the auxiliary ingredients, red oil, and original broth). Dan Dan Noodles are a famous local traditional noodle snack in Chengdu and Zigong, Sichuan. It is said to be named after porters who carried noodles on a pole and sold them on the streets. Dan Dan Noodles are made by rolling flour into noodles, boiling them, and topping them with stir-fried minced meat. The finished dish has thin noodles, crispy and fragrant sauce, salty and slightly spicy, with an enticing aroma and rich flavor.
