In the wave of new consumption, functional foods have become a hot track for category innovation. Whether as a supplement, optimization, or replacement for Chinese dietary habits, they are significantly reshaping the composition of modern food categories. Returning to the basics: What are functional foods? Which evolutionary needs of human food consumption do they address? Where are the future opportunities for health foods? These are the points this article attempts to clarify. What are functional foods? The connotation of functional foods has broadened, with dual innovation in both "face" (appearance) and "substance" (ingredients), meeting personalized user needs, and contrasting with the concept of "everyday meals." Traditionally, functional foods refer to what we commonly call "health supplement foods"—foods with specific nutritional and health functions, suitable for specific populations, capable of regulating bodily functions, and not intended for therapeutic purposes. From a legal and regulatory standpoint, they must meet four requirements:

  • Non-toxic, harmless, and meeting appropriate nutritional requirements;
  • Their functions must be clear, specific, and scientifically verified. Additionally, their functions cannot replace normal dietary intake and the body's requirements for essential nutrients;
  • Functional foods are developed and produced for specific populations who need to adjust certain bodily functions;
  • They are not intended for therapeutic purposes and cannot replace the therapeutic effects of drugs on patients. Functional foods can provide preventive nutritional supplements for healthy populations and promote recovery for those with physiological abnormalities. Their main differences from drugs are: higher safety requirements; no prescription needed, freely consumable; and they cannot replace the therapeutic effects of drugs. According to regulations, functional foods must be certified by the China Food and Drug Administration (CFDA) and bear the prominent label "Health Food." Today, whether in brand messaging or consumer perception, the connotation of "functional foods" has significantly expanded, mainly reflected in: 1. Product-level differentiation In the past, the efficacy and active ingredient formulations of health foods were relatively transparent, and some core categories were highly homogeneous at the supply chain level. For example, in the oral liquid format for relieving fatigue and improving sleep quality, almost all brands simply bottled syrup with highly similar active ingredients, with only slight flavor variations, making channel capabilities and marketing materials the key determinants of market share. Now, however, product formats have added many new variations, from oral liquids, capsules, effervescent tablets, and chewable tablets to gummies, dairy drinks, ice cream, and other "health products that don't look like health products." These differences are strongly perceived by consumers, and even a well-designed package that photographs well on social media can quickly build brand awareness, equivalent to substantial promotional resources. On the other hand, beneath the "face," there have been numerous technology-driven innovations in the "substance": using sweeteners to reduce sugar, plant-based meat to replace red meat, widespread application of bioactive peptides, and new ways of consuming traditional health ingredients like ginseng, red dates, and Job's tears. These innovations either cater to taste preferences, significantly improve efficacy, or resonate with brand tone, and their marketability has been quickly validated. The dual innovation in product format and active ingredients has created significant differentiation at the product level, strongly driving market development. 2. Diversification of audience needs In 2016, the CFDA updated the scope of health food functions, covering the following 27 items: Enhancing immunity; assisting in lowering blood lipids; assisting in lowering blood sugar; antioxidant; assisting in improving memory; relieving visual fatigue; promoting lead excretion; clearing the throat; assisting in lowering blood pressure; improving sleep; promoting lactation; relieving physical fatigue; improving tolerance to hypoxia; auxiliary protection against radiation hazards; Weight loss; improving growth and development; increasing bone density; improving nutritional anemia; auxiliary protection against chemical liver damage; removing acne; removing chloasma; improving skin moisture; improving skin oil; regulating intestinal flora; promoting digestion; relieving constipation; auxiliary protection against gastric mucosal damage. Even four years later, these 27 functions appear quite comprehensive, covering almost all popular efficacy claims. However, user needs go beyond functionality. In the real world, user needs are a complex proposition, and a brand's delivery on this proposition is user experience. Category development is essentially the evolution of user experience. If we break down user experience and assign different weights to each factor, it can be roughly expressed as: User Experience = A×Product + B×Marketing + C×Channel + D×Service + E×Scenario + F×Community + G×Price. Among these, the product factor is very important and often carries a high weight in overall user experience. However, category development is a spiral process; product innovation often hits bottlenecks periodically, and user experience is not always in a period where product weight is paramount. Taking functional foods as an example, during our industry research and user surveys, we found that user needs are highly diverse: Sometimes it's about "affordable prices" and "not feeling the pinch with repeat purchases"; sometimes it's about "convenient purchase" and "triggering impulse consumption"; sometimes it's about "easy to carry" and "shareable with friends and family"; and sometimes it's about "self-fulfillment" and "identification with brand philosophy." These needs are less related to the product itself and more closely tied to other factors like price, channel, and service. Responding to these needs can significantly enhance overall user experience, which in turn reflects in brand awareness and sales performance. The aforementioned product-level differentiation is actually the result of diversified audience needs incentivizing brand innovation; another inevitable outcome of diversified user needs is that innovations in marketing, scenarios, and communities can sometimes leverage higher growth than product innovation. With product-level differentiation, audience need diversification, and multi-dimensional marketing channels (not elaborated here due to space and scope), it can be said that in a broad sense, "functional foods" correspond to "fundamental foods," serving as supplements/optimizations/replacements for daily Chinese meals. Chinese cuisine has its advantages, such as relatively low fast-sugar intake, insufficient saturated fatty acid intake, and relatively ideal vegetable intake (dietary fiber) in most cuisines. However, it also has many problems, with the core ones being:
  • Significantly high salt and certain trace element intake;
  • Low protein (especially high-quality protein) intake;
  • High carbohydrate proportion (almost across all cuisines). Changing dietary habits is very difficult, so these problems in Chinese cuisine will persist in the past, present, and foreseeable future, leaving significant room for functional food innovation: high salt—reduce seasoning use; low protein—increase high-quality protein (e.g., fish) supply; high carbohydrates—reduce sugar/refined carbs, etc. Today, when we talk about "functional foods," the scope has often expanded to include light meals, meal replacements, supplements, healthy snacks, new beverages, and other categories. These categories can provide solutions to compensate for the deficiencies of Chinese meals in one or more aspects. On the other hand, the user base is getting younger, preferences are becoming more Westernized, and both consumption capacity and willingness have been validated, with promising growth space. △2018 National Per Capita Consumption Expenditure and Composition △2014-2018 Per Capita Medical and Health Expenditure of Chinese Residents With the growth of per capita disposable income and consumption expenditure, residents' demands for quality of life continue to rise, and food, tobacco, and alcohol as core consumer categories maintain a stable share (5,631 yuan, 28.4%). Meanwhile, per capita medical and health expenditure amounts and proportions are steadily increasing year by year, and are expected to further rise due to macroeconomic structural adjustments, an aging society, and medical insurance reforms. Functional foods fall within the scope of food, tobacco, and alcohol, and also have certain medical and health attributes, giving them a very broad market foundation. However, due to lagging factors such as category development, consumer awareness, channel iteration, and marketing innovation, China's per capita annual spending on functional foods is only $29, far behind international advanced levels (2019 data found online: South Korea $122; Japan $168; the United States $236). With the shift in health awareness from "treatment" to "prevention," the 25-45 age group, which has strong consumption power and willingness, is increasingly concerned about their own health, driving rapid growth in the entire functional food market. At the same time, considering that this age group was born between 1975 and 1995, their growth period fully coincides with the rapid economic growth phase after reform and opening up. They have been exposed to a large amount of Western cultural knowledge and scientific health concepts, and their category choices tend to be more Westernized than earlier generations. Assuming that in the next 10 years, China's per capita annual spending on functional foods can reach half of Japan's 2019 level ($84), which is the closest neighbor in terms of national conditions, it would release a market size of about 500 billion yuan, with a CAGR of approximately 11.22%, indicating considerable growth space. Plant-based "Plant-based" generally contrasts with "animal-derived products," referring to the use of plant proteins (commonly almond protein or coconut protein in beverages, powders, and seasonings; soy protein in foods) to replace animal proteins, thereby promoting the concept of "delicious, healthy, and environmentally friendly." Although the academic community has significant controversy over plant-based products (focusing on the more reasonable nutritional ratio of animal proteins, more consistent composition, higher human absorption efficiency, higher production standardization, and fewer additives), plant-based products have already achieved enormous market influence and even become a symbol of an avant-garde lifestyle. Initially, plant-based products were developed to serve lactose-intolerant populations. Lactose intolerance is a physiological condition caused by insufficient lactase secretion, leading to diarrhea, bloating, intestinal discomfort, or even vomiting after consuming lactose-containing animal dairy products. To address the protein needs of lactose-intolerant individuals, plant-based products emerged, with soy protein being the first widely adopted category. Subsequently, religious groups and vegetarian communities became the main consumers of plant-based products. Today, plant-based products have evolved from mere "milk substitutes" to important players across multiple dairy categories, with raw materials expanding from soy to include coconut, almonds, nuts, oats, brown rice, and other flavors. Compared to animal proteins, plant-based production is more environmentally friendly, with a shorter full-chain time from raw material acquisition to end product, higher capital efficiency, lower logistics and distribution requirements, more stable properties during reprocessing such as seasoning, and naturally more suitable for cross-regional supply chain expansion due to the ease of raw material availability and simplicity of production equipment. Under multiple factors, global sales of plant-based dairy products have grown at around 10%, while traditional animal dairy products are reportedly growing at -6% to -8%. The market space for plant-based beverages is enormous. Taking plant-based beverages alone, based on multiple data sources, the total domestic beverage market in 2020 was approximately 163.528 billion yuan, with plant-based beverages accounting for about 10%, totaling nearly 20 billion yuan, and the compound annual growth rate is expected to exceed 15%. There are already nationally renowned brands such as Six Walnuts, Chengde Lulu, and Hainan Yeguo. The application of plant-based in other product formats has also been market-validated, including cheese, cream, desserts, coffee creamers, plant-based meat, and even seasonings, with mature leading brands. Combining data models from Nielsen, Euromonitor, Business Wire, Zion Market Research, and others, under a neutral-to-optimistic assumption, the global plant protein market is expected to reach 400 billion yuan within the next five years, with core growth coming from replacing animal dairy products. In a longer time frame, the larger growth point for plant proteins will be in capturing the animal meat market, with dozens to hundreds of times the growth space compared to current sales of companies like Beyond Meat. In terms of plant-based raw materials and flavors, the US, Europe, and the Middle East (especially Mediterranean diet regions) prefer almonds, while Asia (especially Japan) prefers soy and coconut. In terms of specific application categories, dairy products are the most popular globally, with fermented products like yogurt (annual growth over 60%) and desserts (annual growth around 30%-40%) in the US and Europe also growing rapidly, while Asia currently focuses on flavored dairy products, with other category extensions still underway. Based on interviews and research, preliminary views on the domestic plant-based market are as follows: 1) Plant protein beverages: There is an opportunity for new brands built on communities. This product format has a longer market education period, more mature user awareness, and relatively well-established channels. Traditional giants already hold significant market share, and consumer profiles span all age groups and regions. New opportunities may arise for new brands co-created with young consumers, leveraging the shortcomings of traditional giants—"big ships are hard to turn," conservative brand images, complex distribution channels, and slow supply chain response—by inviting users to participate in product definition, building online and offline communities, and seeking differentiation in flavors, packaging design, and marketing methods (and the plant protein beverage track itself has relatively high and stable gross margins, providing room for such innovative experimentation), quickly building brand mindshare among younger demographics. 2) Plant-based meat: The domestic market still needs time to mature. Even in the US, the plant-based meat market sales in 2019 were only about $939 million. The enthusiasm and acceptance of plant-based meat in Europe and the US largely stem from the world's highest vegetarian proportion, religious-rooted humanistic care, and strong environmental awareness, but domestic mass consumers do not deeply perceive these factors. Another point that cannot be ignored is that the dietary structure in Europe and the US differs greatly from China's; the former's meat intake has long exceeded WHO recommended levels, with fat, purine, and cholesterol intake all exceeding standards. So for European and American consumers, replacing red meat with plant-based meat in daily diets is beneficial to health, and they are willing to pay a premium for it (currently, plant-based meat has not achieved economies of scale, and the unit price of leading companies like Beyond Meat is generally slightly higher than the animal meat they target; China's older "vegetarian meat" is cheaper, but its taste differs greatly from animal meat). In China, however, per capita meat consumption still lags behind WHO recommended levels (some cuisines are as low as about 30% of the recommended level). Chinese consumers at this stage are more focused on eating more meat ("providing fuel in snowy weather") rather than paying a premium for healthier meat ("adding flowers to brocade"), so consumption of plant-based meat is likely to remain at the novelty stage, with only a small segment of high-income, educated, fashion-forward consumers in first-tier cities potentially making repeat purchases. 3) Plant protein dairy products: There is an opportunity to overtake on the curve. According to consumer profile research, among consumers of dairy products such as cheese, desserts, and coffee creamers, women aged 25-45 account for over 60% or even 70%, and this group has strong health awareness and willingness to pay, with "not gaining weight" having a huge impact on their purchasing decisions. Overseas, vegan desserts based on plant protein dairy have produced leading brands valued at hundreds of millions of dollars (Kite Hill, Dream Pops), and domestic brands like Zhong Xue Gao and Zhongjie 1946 have also been very successful in their trials. However, currently, many domestic consumer groups first find a brand's taste appealing, become loyal customers, and then are willing to try the brand's health-focused plant protein dairy products. In other words, "delicious" takes priority over "not fattening," and how many consumers will buy an unfamiliar brand solely for health rather than taste remains to be verified. 2. Probiotic products Probiotics are a collective term for a class of active microorganisms that can colonize in the human body and alter the composition of microbiota in a specific part of the host. Different probiotic strains work through different mechanisms to improve the intestinal environment, promote nutrient absorption, enhance immunity, and improve bodily functions. The most common probiotic strain is lactic acid bacteria (actually a collective term covering more than 200 strains), named for their ability to ferment dairy products to produce a sweet and sour taste, and often marketed as "enzyme" or similar. Lactic acid bacteria are also the most widely recognized and accepted probiotic strain, with excellent taste and broad audience. According to statistics, the annual sales of lactic acid bacteria products in China are approximately 170 billion yuan (including 140 billion yuan for yogurt and beverages, with a CAGR of about 14.7%; and 30 billion yuan for supplements, with a CAGR of about 16.1%), accounting for about 95% of the entire probiotic product market. Looking at the global probiotic product market, gross margins for major brands are considerable, valuations in the capital market are relatively favorable, and new players are emerging in large numbers, bringing fresh creativity and flavor innovations to the market. Among these, yogurt, beverages, and seasonings have higher supply chain requirements because:
  • The reprocessing, flavoring, and shaping of multiple raw materials are more complex than simply cultivating strains;
  • The impact of lactic acid bacteria on overall product taste is closely related to time, requiring strict control of inventory turnover cycles;
  • To maintain bacterial activity, products need cold chain transportation most of the time, and expanding retail channels or distributing to small terminal stores requires strong cost management capabilities. In contrast, the supply chain requirements for supplements are slightly lower. On one hand, the product composition is simple and stable, with high controllability of the manufacturing process; on the other hand, the market competition pattern is relatively fixed (although the overall market is growing rapidly, the growth trends of various brands are relatively similar), and product formats are very mature (powders, capsules, chewable tablets, etc.), with no significant innovation needs. Based on interviews and research, preliminary views on the domestic probiotic beverage market are as follows:
  1. The difficulty of developing new channels and scenarios has eased. In the Chinese market, probiotic beverage sales heavily rely on offline channels such as convenience stores, restaurants, and department stores, with little change for a long time. However, in recent years, with the deepening of health management concepts and the increasing maturity of cold chain logistics infrastructure, probiotic beverages, in addition to being leisure snacks and drinks, have increasingly appeared in main meal and exercise scenarios, sold through fitness venues, meal replacement pairings, etc., beyond shopping malls, supermarkets, convenience stores, and small shops. They have also performed very well in the hottest live-streaming e-commerce, with significant improvement in the diversification of sales channels for probiotic beverages, providing faster access to a broader consumer base (as evidenced by high sales growth rates on major e-commerce platforms), leaving ample room for the rise of new brands.
  2. There is some innovation space in packaging design and flavor differences, and freshly made beverages will reap the first dividends. To maintain probiotic activity, packaging design requires certain light-blocking measures, so most probiotic beverages on the market use semi-transparent plastic bottles with printed shrink wrap, resulting in a relatively similar overall look and mediocre aesthetic orientation. Relatively successful innovations are mostly concentrated in shrink wrap color schemes, bottle size, and grip lines. In terms of flavor, due to the similarity in probiotic strain ratios, differentiation is concentrated in additional flavoring ingredients (currently successful ones include aloe vera, banana, mango, strawberry, white peach, etc.). Referring to the development history of overseas probiotic product retail markets, combining freshly made beverages with probiotic beverages can effectively break through the dual innovation dilemma of packaging design and flavor differences—on one hand, freshly made beverages are delivered directly for consumption, allowing bolder packaging design without considering transportation requirements; on the other hand, freshly made beverages have more diverse ingredients and fresher materials, providing greater room for flavor experimentation. Domestic leading brands such as 1点点, Heytea, Naixue Tea, Coco, and Mixue Bingcheng have all made related attempts (some series even use commercially available Yakult as an ingredient rather than probiotic powder or concentrate), and have achieved relatively good market responses, with potential for wider promotion and adoption. There are even rumors that some brands are considering spinning off probiotic beverages into independent product lines or even standalone stores.
  3. The development of new strains will open up new functional markets. Although the growth rate is still considerable (CAGR of about 14.7% in 2018), the actual growth rate of lactic acid bacteria yogurt and beverages has hit a five-year low, a full 10.7 percentage points lower than the 25.4% in 2014, and this figure may face further decline. This challenge also appeared in the Japanese, Korean, European, and American consumer markets a few years ago, and one of the strategies adopted by foreign brands is to develop new functional strains to provide consumers with more diverse choices. Meiji, as a representative manufacturer of this strategy, has launched products such as Probio LG21 (which can inhibit Helicobacter pylori, freshen breath, and reduce cancer risk), R-1 (which can prevent viral influenza), Probio PA-3 (which can inhibit purine absorption, lower uric acid levels, and alleviate gout), and Bulgaria LB81 (which can improve skin function), in addition to traditional lactic acid bacteria products, gaining a large number of loyal niche users. Even after a series of serious quality issues (containing radioactive substances, low iodine content, substandard biotin levels, contamination with colloidal fragments, etc.), they were still able to quickly regain consumer favor. Innovation in new strains and ingredients poses a significant challenge to a team's R&D capabilities, but if phased breakthroughs can be achieved, it can quickly occupy user mindshare through the high binding of category words and brand words, obtaining extremely significant differentiated competitive advantages. 3. Sugar and fat control Behind the craze for sugar and fat control, even zero sugar and zero fat, lies the difficulty in reconciling young consumers' "rising priority of body shape management" with their "lack of nutritional knowledge, cooking skills, and exercise time," leading them to seek dietary modifications. This dietary approach is scientifically based (as the fitness community often says, "70% diet, 30% exercise"), and some ingredients actually taste better and look better after sugar and fat control processing. Sugar and fat control has gradually shifted from a niche core need of weight management groups to a broad public demand. There are two main paths for fat control:
  • Providing high-quality fats (such as unsaturated fatty acids in nuts and conjugated linoleic acid (CLA) in fish), which not only reduces the absorption of "bad fats" (industrial trans fatty acids) but also requires additional energy for metabolism and activates a series of molecular signal transduction receptors, enhancing bodily performance;
  • Not adding extra fat, mainly in beverages and seasonings, by preprocessing raw materials and rebalancing flavors to achieve near-zero fat levels. Products focusing on "providing high-quality fats" generally have higher prices, while those focusing on "not adding extra fat" have relatively lower premiums, determined by their raw material types and supply chain complexity. But if we examine the fundamentals, the latter's fat control progress is more transparent, with more immediate positive feedback, lower user thresholds, and more significant long-term effects when adhered to for 3 months or more. Therefore, the latter may have a better chance of becoming a mass category, while the former may have a better chance of building a brand and channels through premium pricing. There are also two main paths for sugar control:
  • Using sweeteners to replace the flavoring role of sugar. Common sweeteners can be divided into non-sugar sweeteners (the most well-known to the public may be xylitol) and functional sweeteners (mainly oligosaccharides, which have fewer carbohydrates at the same sweetness level and are difficult to absorb, barely participating in energy supply).
  • Due to Chinese regulatory policies prohibiting the use of artificial sweeteners other than sodium saccharin (commonly known as "saccharin"), oligosaccharides have become the most popular sweetener choice due to their low raw material cost, convenient processing, and stable properties.
  • Choosing high-satiety ingredients to replace the staple food role of sugar. Common low-sugar, high-satiety ingredients can be divided into high-moisture content (tofu, oatmeal, sesame paste, konjac powder, etc., with the principle roughly understood as "making the stomach feel full") and high-protein content (meat, with the principle being that protein provides similar energy per unit weight as carbohydrates, but digests more slowly and stays longer in the digestive system). In recent years, many brands have been trying to expand the staple food role of these two types of ingredients, achieving phased market validation. The supply chain transformation difficulty for using sweeteners to control sugar is relatively low (switching from adding sugar to adding sweeteners involves almost no additional processes or equipment), while categories using high-satiety ingredients (except traditional categories like oatmeal and sesame paste) have higher supply chain transformation difficulty (whether high-moisture or high-protein ingredients require significant innovation in raw material ratios, cooking methods, and flavor formulation to be competent as staple foods). Therefore, the former is more suitable for incremental innovation in large categories like snacks and beverages, while the latter is more suitable for independent development as a new category. Based on interviews and research, preliminary views on the domestic sugar and fat control market are as follows:
  1. In the short term, marketing-driven rapid growth is possible, but long-term opportunities lie in taste, user education, and expectation management. Any category related to personal image is prone to impulse consumption, and sugar and fat control is especially so. Many consumers' initial motivation for purchasing sugar and fat control products is anxiety about weight loss, but they lack sufficient knowledge of nutrition and human physiology, and have no scientific or reasonable expectations for weight loss speed, so they seek systematic, productized, lazy, one-stop solutions. Many brands have seized on this and engaged in unbridled "anxiety marketing," especially in channels like WeChat business where applicable laws are lacking and regulation is difficult, making "exaggeration" a common practice. This rapid growth driven by exaggerated marketing contains certain bubbles, which may backfire due to stricter regulation or consumer complaints, or even pose systemic risks, making it unhealthy and unsustainable growth. We believe there is only one long-term healthy and sustainable marketing-driven approach: let product strength speak for itself, while doing user education and expectation management, thereby building a loyal community and establishing brand awareness.
  2. The sustainability and market space of initial category dividends remain to be observed, and the greater opportunity lies in combining with the standardization of Chinese cuisine. Many domestic sugar and fat control brands have not clearly thought through one thing during product definition: "What product format is most suitable for Chinese consumers?" As a result, many categories are derived from the diets of professional bodybuilders, and are based on Western, especially European and American, dietary styles—bodybuilders eat boiled chicken breast, so we make ready-to-eat chicken breast with a few flavors; Europeans and Americans like salads, so we make salads with more dressing. This approach is very convenient for initial communication with the supply chain and can quickly gain volume by leveraging the public's perception that "what professional athletes eat must be healthy, and the product format looks interesting." However, after developing to a certain stage, it may encounter growth bottlenecks because the category's taste is not suitable for mass consumers, becoming a brand that survives comfortably but struggles to reach the next level. Currently, categories such as ready-to-eat chicken breast and light salads have shown such a trend. From a long-term imagination perspective, what is more suitable for the vast majority of Chinese consumers is definitely product formats that are lightly modified from ordinary people's diets and based on Chinese culinary styles. This type of innovation—whether new seasonings like sweeteners, new staple foods like rice, vegetables, fish, meat, and noodles, new cooking methods like air fryers, or even dishes like double-skin milk and white-cut chicken that have long existed but whose healthiness is significantly underestimated—has the potential to truly enter thousands of households, and can even be organically combined with the standardization of Chinese cuisine (such as standardized semi-finished ingredient delivery), achieving simplicity, deliciousness, and ease of adherence, thereby unlocking larger market space. Some domestic brands have already explored this direction and achieved good market feedback. For example, Alandway, a full-category sports nutrition and healthy snack brand, ranges from snack bars to sports nutrition powders and low-fat chicken breast products, meeting the nutritional needs of fitness, health, and general populations. From fitness vertical groups to the general public, this also reflects the different demands for similar functional foods between China and the West. Chinese fitness enthusiasts are more willing to try products with lighter specifications, moderate protein content, convenience, and low calories, sugar, and fat.
