# Shisheng's “Live Soy Sauce” and the Search for a New Premium Standard

China's soy sauce market has moved through repeated upgrades: loose product to bags and bottles, ordinary grades to premium grades, and conventional products to zero-additive and organic claims.

As each claim becomes common, its ability to differentiate declines. Shisheng Brewing, founded in 1948 in Laizhou, Shandong, introduced what it calls “live soy sauce” after a decade of development.

The company exports to more than 70 countries and regions. Its domestic launch attempted to build a premium category around measurable enzyme activity, extended fermentation, and non-thermal filtration.

The health implications of any enzyme claim require careful scientific and regulatory evaluation. The product-strategy lesson is how a manufacturer can turn process capability into a more defensible proposition.

## Three Technical Thresholds

### Measured SOD Activity

Shisheng's group standard specifies superoxide dismutase activity of at least 10,000 units per 100 milliliters, supported by third-party testing according to the company.

SOD is heat sensitive, so conventional high-temperature pasteurization reduces activity. Preserving it is therefore a process challenge rather than simply a matter of adding an ingredient.

The measured presence of an enzyme does not automatically establish a consumer health benefit. Claims about physiological effects need evidence specific to the final product and intended use. Commercially, however, a quantified and testable attribute is more credible than an undefined “active” label.

### Long Fermentation and Membrane Filtration

Shisheng ferments the product for 210 days, compared with the 30–60-day cycles cited for many ordinary products. Longer fermentation allows more time for soybean proteins to break down and contributes to amino acids, aroma, and flavor balance.

The company then uses membrane filtration instead of high-temperature sterilization. It says the process achieves commercial sterility while retaining heat-sensitive components and natural aroma.

The combination is important. Long fermentation creates the flavor and composition, while non-thermal microbial control preserves attributes that heat would change.

### Export Standards and Certifications

Shisheng produces domestic and export products on the same lines and cites more than twenty certifications and approvals covering markets including the European Union, United States, Japan, and Australia. These include food-safety, organic, kosher, and halal systems.

Certification does not prove every marketing claim, but it provides evidence of process control and the ability to meet different market-access requirements.

The company also reported that its soy sauce sells at substantially higher prices in some overseas supermarkets, suggesting that premium positioning has been tested beyond the domestic launch.

## Why the Category Could Matter

Soy sauce is a high-frequency staple used for dipping, cold dishes, marinades, steaming, and stir-frying. A successful category upgrade can therefore redistribute value across a very large installed market.

Zero-additive soy sauce followed a similar path from unfamiliar claim to mainstream segment. Early distributors were able to build channel knowledge and consumer recognition before competition intensified.

Shisheng is attempting to establish a new vocabulary before “live” becomes crowded. Its advantage depends on whether consumers can perceive a meaningful difference in flavor or product experience—not only whether the technical story is distinctive.

## What Distributors Should Verify

Early category entry creates opportunity but also risk. Before adopting a technical premium product, a distributor should verify:

- the applicable standard and independent test method;
- the stability of the measured attribute through shelf life;
- the exact claims permitted on label and in retail communication;
- sensory difference and repeat-purchase evidence;
- supply capacity and quality consistency;
- price architecture and channel margin;
- the manufacturer's real field-support budget;
- consumer understanding beyond launch curiosity.

Shisheng described support for listing, display, promotion, media, and after-sales service. Those commitments become valuable only when they are specified, funded, and linked to sell-through.

## Process Innovation Must Become Consumer Value

Shisheng's 78-year brewing history, long fermentation, filtration system, export experience, and certifications create a stronger foundation than a purely invented trend label.

The final test remains the market. Technical barriers can protect a product, but they do not replace clear taste, trustworthy communication, repeat purchase, and disciplined category education.

“Live soy sauce” will become a durable premium segment only if its production difference becomes a consumer difference that people can understand and choose again.
